With a background in Peruvian-Mediterranean cuisine, and ten years of experience at restaurants and hotels in Peru and New York, Diana is the executive chef who took on the challenge of serving a menu based on the cuisine of Lima to everyone in San Isidro. Diana uses locally sourced and premium quality supplies, adding the touch and taste of a typical city restaurant.
“Our purpose is to be the meeting point of San Isidro, so that residents can sit at our table to share and enjoy the cuisine of Lima. What we want to do is make our guests come here and feel at home thanks to our homemade dishes”.
For the creation of this menu, Diana Ballén was inspired by her passion for traditional cuisine, with slow cooking techniques and well-rounded flavours.
She also embraced Mediterranean and Asian influences, seeking to convey emotions in each dish and deliver an unforgettable culinary experience.
